During shelter in place I’ve been spending a lot of time cooking easy, vegan recipes and wanted to share my favorite easy ones that my go-to on weeknights.
The key to recipe is getting the right curry powder. I recommend this brand.
I like this paired with roasted garlic couscous. This easy to cook version is great.
Modification: After 10 minutes of the soup cooking, I added tiny chopped zucchini and it was great!
I garnish with chopped roasted peanuts, green onions and chili flakes (skip the cilantro)
